We just roast it gentler (golden instead of brown) so it keeps way more caffeine and tastes like peanut butter. Think of it as the unicorn of coffee: pale, nutty, and way more caffeinated than it has any right to be. Half our customers drink it straight; the rest blend it 80/20 with medium or dark and call it dessert in a cup.

It’s not some magical fairy bean grown on a secret mountaintop. It’s the exact same premium Costa Rican beans we use for all our roasts. We just baby them with a super-gentle roast at a much lower temperature so they stay a beautiful golden color instead of turning brown.
Most roasters stop at “yellow” and it tastes like hay. We push it one shade darker to golden — and boom — it develops these ridiculous peanut-butter and honey notes. I’m dead serious. It’s like dessert in a cup without the guilt.
Because we don’t roast the living daylights out of it, this white roast actually keeps way more caffeine than dark roast (up to 50–100% more per cup). Perfect for that afternoon kick when you want to feel awake instead of wrecked.

Each year Alisha and I bring in 20–30 different bean samples from the most prestigious plantations in Costa Rica’s Tarrazu Region. Why Tarrazu? Because it’s basically the VIP lounge of smooth coffee — world-renowned for producing beans that are ridiculously low in acid and loaded with flavor.
Alisha — our professional coffee taste tester and wine sommelier — puts every single one through the wringer. We spend a full day swirling, sipping, and spitting like absolute pros until we crown the single best one. This year we landed on the Estate Beans from Hacienda La Minita. Grown literally in the owner’s backyard, these are the kind of beans that make you wonder why anyone settles for anything less.

Why Rainforest Alliance Certified Beats Institutionalized “Organic”
“Organic” sounds great on paper — basically just means they skipped the synthetic pesticides. Fair enough.
We went with Rainforest Alliance Certified because it actually goes way beyond that. Every bag of our White Roast comes from Hacienda La Minita, a Rainforest Alliance Certified estate in Costa Rica’s Tarrazu region. That means the farm is actively protecting wildlife corridors, saving water, rebuilding healthy soil, and making sure the people growing the beans get fair pay and decent working conditions.
It’s not just about what isn’t sprayed on the coffee — it’s about the whole ecosystem and the farmers actually doing well. And here’s the part we really care about: you can taste the difference in the cup. If you couldn’t, we wouldn’t go through the extra trouble.


5 Reasons This Low-Acid White Roast Won’t Wreck Your Stomach
It tastes ridiculously good — peanut butter and honey notes that actually stick around — but the real magic happens in your gut. Because we roast it so gently, all the natural oils and antioxidants stay locked in, making this one of the easiest-drinking coffees on the planet (especially if your stomach has ever given you grief). Here’s what you actually get:
- No indigestion — even on an empty stomach
- No acid reflux — you can actually enjoy a second (or third) cup
- No bloating — it just sits nicely
- No emergency bathroom runs — you know what I mean
- Way better tasting coffee + 50–100% more caffeine (because we didn’t scorch the beans)
These Beans Are Hard as a 10-Penny Nail — You Need a Real Burr Grinder
Because we roast them so gently, they stay extremely dense. A cheap blade grinder will struggle, heat up, and in more than a few cases we’ve had customers report that the motor simply burned out.
Do not try grinding these with a blade grinder.
You need a decent burr grinder — electric or manual. I’ve used several quality manual burr grinders on these beans and they work just fine. It takes a bit more effort than a normal medium or dark roast, but the result is clean, even grounds and no ruined equipment.

How to Brew Our Golden White Roast (It’s Basically Foolproof)
These golden beans are dense and a little stubborn — kind of like that friend who refuses to wake up before noon. So start with a solid burr grinder (check out our Coffee Gear 101 Page).
As for taste, in the traditional sense, don’t expect “coffee.” To me it tastes more like peanut butter tea. Weird? Maybe. But we sell a ton of it anyway. Some folks love drinking it straight. Me? I’m usually in the 80% dark or medium + 20% white camp. That blend is straight-up sweet magic.
The great news? It doesn’t matter what brewing method you use — these beans are ridiculously forgiving. I personally lean toward the ones that let the grounds hang out with hot water for a while so all those peanut-butter and honey notes have time to wake up properly.

A vast majority of coffee companies, who do offer white roast, they roast it to the color of yellow, which tastes like straw. Yuck. So, I just roast it one shade darker to gold. Now it tastes like peanut butter.

Are these white roast beans low-acid and good for sensitive stomachs?
Huge yes. The gentle roast locks in all the natural oils, so it’s one of the easiest coffees on the gut. I’ve heard the same thing from customers for 11 years.
How fresh are your white roast beans?
Each Tuesday morning these golden beauties are roasted, cooled, weighed, bagged, seales, and boxed in 20 minutes. Then 3 hours later, they’re on the USPS or FedEx truck headed to your kitchen table.
Here’s the funny thing. When I hand the boxes of beans to the shipper, the box is still warm from the beans. Now that’s fresh!
What are the best ways to brew smooth white roast coffee?
Pretty much any brewing method works great with these beans, but the winners are the ones that give the grounds time to steep and release all those peanut-butter and honey notes. My favorites: French Press, AeroPress, cold brew, or a nice slow pour-over. Just make sure you use a good burr grinder — these golden beans are dense little tanks.
Can I use these white beans in an espresso machine?
You sure can. Remember, espresso is a brewing method, not a specific bean or roast level. A lot of customers blend these with our dark or espresso roast and love the results.
