Here’s what Alisha and I do: we line up 20 to 30 different bean samples from the Tarrazu region of Costa Rica. Why Tarrazu? - Then we cool ’em, weigh ’em, bag ’em, and seal ’em — often within minutes — so they’re on a truck the same day.
