OK, we’ve talked about what’s “fresh”. Now let’s talk about the roasting process. Here’s another truth about coffee. If the beans are black, then you’re tasting the roaster and not the bean. Many people tell me that they like “strong” coffee. In reality, what they’re saying is, “I like burnt coffee.”
When an industrial coffee company burns their beans, do you know what you end up with? Charcoal. That’s right. Frankly, if you like burnt coffee, then you might as well buy a bag of Kingsford Charcoal and drink that. I’m not kidding. If coffee upsets your stomach, it has nothing to do with acid. It’s because you’re drinking charcoal. Seriously, coffee has nearly the same ph level as tomato juice and milk.
The oils in the coffee bean are where all the bioflavonoids, antioxidants, caffeine, and flavor reside. As soon as you grind those beans, those oils start to evaporate. And it doesn’t matter how you store that pre-ground coffee, the taste starts to dissipate immediately.
