I like coffee and I really like BBQ. I can’t think of a better thing than to combine the two. Below is my sister Karen’s coffee BBQ rub.
This is great on anything you put on the grill.
Here’s the weird thing, the meat doesn’t taste anything like coffee.
But what the meat does taste like is moist and flavorful. Give this a try, it’s super easy and fun.
Coffee Rub
- 1/2 cup finely ground coffee
- 1 Tablespoon garlic salt
- 1/2 teaspoon chili powder
Pour a scant amount of Extra Virgin Olive Oil on the meat, one hour before cooking. Rub the coffee mixture on meat and let sit out on the counter. Just before cooking, rub excess amount of coffee off. Grill, or cook as you please.
Coffee Rubbed Salmon in foil
Additionally, we tried it on salmon. Now keep in mind that I’m not a big fan of vegies, but I’ll tell you, the Coffee Salmon in Foil recipe below was to die for. The vegies actually had some taste and that’s saying a lot coming from me.
- 1 lb. salmon, 1″ thick, cut in 4 servings (use coffee rub before cooking)
- 2 cups long slices of a variety of peppers, red, yellow and orange
- 1 cup sliced yellow onion
- 1 cup snow pea pods
- 1/2 cup sliced mushrooms
- 1 Tablespoon fresh thyme
- 1 Tablespoon fresh orange zest
- 4 cloves sliced garlic
- 2 Tablespoons EV Olive Oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 medium orange thinly sliced
Preheat oven or grill to 400 F. Cut 4 14″ squares of aluminum foil. In a bowl combine all vegetables, thyme, orange zest, salt and pepper, and olive oil. Toss to coat. Divide vegetable mixture among the 4 pieces of foil. Place a piece of coffee rubbed salmon on top. Place 2 slices of orange on top of each piece of salmon. Fold foil and roll edges to seal. Place on a baking pan if cooking in the oven or directly on the grate of a grill. Cook 25 minutes.
